(一)基本資料

My choice of university was William Angliss Institute in Melbourne, which is renowned for its cookery. Therefore, I decided to study Culinary Management there, which helped me gain experience in the back of house and front of house.(38字)

One of my favorite courses is Food and Beverage Operations, a course that teaches you all the roles of the front of house at a fine dining restaurant. You will experience the work of a bartender, a kitchen passer, a waitress and even a manager. During the first two weeks of the course, the lecturer will explain what the course is all about and will also take you to a fine dining restaurant to see how other people provide service. After the third week, you will begin serving real customers who book through the school's website. By attending this course, you can quickly learn and acquire the knowledge of front-of-house service from practice. Your lecturers, classmates and even customers are very friendly and even if you make a mistake, they will not blame you but encourage you. In conclusion, this course is recommended if you are looking for a front of house jobs. Another course is also recommended, called Food and Beverage Knowledge. This course is suitable for those who have front of house experience. However, if you have less than one year of experience, please choose the former course as the hospitality industry in Melbourne and Taiwan is quite different. This course focuses on food and wine pairing, and in the first few weeks you will learn how to taste wine, distinguishing aromas and textures such as acidity, tannin, and flavors from the nose and palate . After that, you will start to taste a variety of red, white, sparkling and sweet wines with the matching food and write your wine tasting journals. In the final week, you will cook food to go with your chosen beverage which is really interesting. Fortunately, I had a time conflict with another course so I was able to take both, which allowed me to gain and enhance my experience.(306字)

The campus is ideally located close to the CBD, with Southern Cross train station just behind the campus and connected to the Spencer Outlet. If you want to go to the city, there are tram stops on the 30 and 35 routes. Although the campus is not big, it has all kinds of facilities. I live in a student accommodation called Scape, they have a lot of properties spread all over the place and the one I live in is in the CBD so it's very accessible. I rented a single room so I had my own bathroom and private space to enjoy my time and focus on my studies. There are many shopping centers, supermarkets, tram stops, train stations and restaurants nearby, and even the State Library is very close to me. Living in CBD is really convenient and enjoyable. The weather in Melbourne sometimes varies a lot between morning and afternoon in a day. For example, it can be sunny and hot in the morning, but then it starts to rain and get cold in the afternoon. Therefore, remember to check the weather whenever you go out and carry a jacket with you. As Melbourne is close to the South Pole, winters can be very cold even in Spring. Melbourne has a wide variety of restaurants from various countries, and it is a great opportunity to experience food that you can't taste in Taiwan. Although you may find the prices expensive, once you see their portion sizes, you will find it acceptable. As Melbourne is famous for brewing coffee, there are many cafes that serve good coffee and you should definitely try them. For clothing, the prices of clothes in Melbourne are much higher than in Taiwan, but there is an Australian brand that offers very affordable ones called Cutton On.(301字)

For me, the most frustrating part of being in Melbourne is the study. The teaching methods in Melbourne are very different from those in Taiwan. For example, in Melbourne, they focus on hands-on experience, while in Taiwan, we focus on textbooks and theory. However, this is not the part that upsets me. In fact, I enjoy learning from practical experience. The most challenging part is the assessments in every subject. You are required to write essays of over 1500 words, with in-text citations and reference lists in APA7 style. Moreover, every idea must be supported by books or journals from Google Scholar. This means spending a long time reading articles, looking up information, writing essays, and citing references. These are things I never learned in Taiwan, so it has been difficult for me to submit every assessment. Even after studying for two semesters, I still haven't gotten used to it. But you don't have to worry too much because there is a compulsory course that teaches you how to write an essay that meets their requirements and helps you get a high score. You can also book an appointment with the lecturer to solve any problems you have while working on your assessment. Nothing about the living or culture in Melbourne frustrates me; instead, I enjoy living here. You don't have to be afraid of speaking English because people are very friendly, and no one cares about your grammar or accent. One of the reasons I love living here is that I can be myself because no one is going to laugh at me, even if my outfits look very weird.(270字)

(五)大三出國建議

First, although no one cares about your grammar or English accent, it is better to keep studying English to enrich your vocabulary and improve your listening skills so that you can adapt to the courses quickly. Listening is especially important because you will encounter lecturers from different countries with various accents, which might be hard to get used to. Second, start working on the assessment as soon as the lecturer explains it. In my experience, you won't have enough time to finish it in just a week. Additionally, the passing score is 50, so the grades you receive won't be as high as those in Taiwan. It is very normal to get only 70 or 80, so don't be frustrated by this. Third, Australia is very strict about plagiarism and the use of AI, so avoid using ChatGPT, Grammarly, or other similar apps for your essays. Otherwise, you will be punished severely. Fourth, we have to do a work placement in the second semester, so apply for jobs through local recruitment websites two months before your holidays start, as it is very difficult to find a job in Melbourne. The fastest way to get a job is to drop your resume off at restaurants. Fifth, there are many scams in Melbourne, so stay alert and do not trust any unknown callers, messages, or links. Last but not least, enjoy your life while studying in Melbourne; you will find it's an amazing place. If you have an international driver's license, I recommend taking a road trip to the Great Ocean Road. You'll love it.(260字)
