(一)基本資料

The school I chose to study for my study abroad is William Angilss Institute, located in Melbourne, Australia. The course I enrolled in is Bachelor of culinary management. Since I am in class A, I will be studying for a semester and working for another. During the semester when we studied I was given 4 classes, which were cookery and recipes, foundation of cuisine, food and beverage knowledge and foundation academic communication skills. (72字)

One of my favorite classes while attending school was food and beverage knowledge. During the class we were able to learn different kind of cocktails such as old fashioned, high ball, Espresso martini and more. We also learned red, white wines and rose. The professor taught us how the grapes were made into wine, how every species of grape has it own flavor profile and its characteristics, such as the level of acidity, sweetness, tannin and the aromas of these wines. After learning these knowledge, we went on how these wine could be paired with food, also known as complementary wine pairing. This method uses the similar taste of food and wine to bring out the unique taste of both. For example, if we were to have something sweet such as a tiramisu, it is best to pair it with a wine that is sweeter than the food. In this case, we would use a bottle of moscato to pair with the tiramisu, because the wine is sweeter than the food. If the food is paired with a wine that is not sweeter, the wine will taste sour and bitter. Another thing that i like about this class is because not only does the professor have theory classes but also gives us the opportunity to try out these theories. He would make us meals to pair with the wine to let us remember with our palates. Also, for our final presentation we had to come up with our own food and wine pairing and since we had students from all around the world. I was able to taste dishes from different cultures which was amazing. There was one group that made Indian food. At first, I thought that it would be difficult to pair wine with a cuisine that rich in flavors and aromas. To my surprise the pairing they chose was a success. (314字)

William Angliss Institute is located in Melbourne CBD. Since it is in the city, there are many stations around the school. Here are 2 train and tram station, which makes it a convenient location for students who live in the suburbs. The school does not offer any dorms, so I had to find an apartment by myself. Lucky for me, I found a place to stay with one of my older batch mate from ITM. The location of our apartment is also in the CBD, so we can easily go to school from our house. We could either walk ten minutes or take the tram from our place. It is very convenient to stay in the CBD because we are literally surrounded by public transports including the train station, tram station and bus station. There are also many supermarkets around us, for example the big chain supermarkets such as Coles or Woolies. Also, we have many Asian supermarkets near us, so if one day we want to cook something Asian I will not need to worry about not being able to find the ingredients needed. The weather in Australia is very enjoyable, no matter summer nor winter it is not humid, so it is not extremely cold or hot here. During the summer, I could even go for a walk under the sun without sweating. Unlike Taiwan whenever it is summer, I would sweat like crazy and have to change my shirt every few hours. The most special part of Australia is that we have daylight saving which means that during the summer our time will move forward one hour to enjoy more time during the day and by winter the clock will go back an hour. During my time in school, one of the difficulties I encountered is writing essays for my assignment. It has been a while since I last written an academic essay, so at first I was a bit rusty. Another thing about writing an essay is that I had to do research and write them down as reference. The school also requires our reference to be academic. Instead of just finding any information on the internet, I had to use google scholar. This is a site where all academic papers are published. In Taiwan I was never required to do reference, I just had to do some research and write all of them down. The school also emphasizes on academic integrity. This means that you cannot just copy anything you read on the internet, you had to change the whole sentence structure and write it down in your own words. After that you need to put an in cite reference at the end of the sentence to show where you got the idea from. Regarding to culture shock. Before coming here, I thought that I might face some racial discrimination whatsoever, but to my surprise everybody here is friendly to all kinds of culture. Since there are all kinds of people from different countries, it is nonetheless a big melting pot of cultures. Another thing that I did not get used to at first, is how they pronounced certain words and have different names compared to Taiwan. Words such as basil is very common. Another is that they do not say fries but chips. (262字)

(五)大三出國建議

My first advice to my younger batch is that it is best to start working in Taiwan. When you find work, do not just choose something that you will not learn anything such as a clerk in a convenience store but a place in the hospitality industry. The reason for this is that in Australia employers want to find people with experience and knows what they are doing, employers do not have the time to teach you from the start. There is no place for a blank sheet of paper in this industry. Since Australia is known for its working holiday, not only will you be competing with local people but also people around the world. My second advice is that when finding work, try to look for a business that is owned by white people not Asians. The first reason for this is because Asian owned business will always underpay you. They would only pay you minimum wage, this amount would sound a lot compared to Taiwan’s currency, but if you want to have a good quality lifestyle this would not be enough. While on the other hand, white people owned business would pay a lot higher, sometimes twice the number of Asians. They would also pay you penalty rate during the weekends. Penalty rate is a bonus for people who are still working while the majority is not. Times such as after 7pm or weekends, the employer would pay you more. The second reason why to work at a white person owned business is that you will be in an English spoken environment while Asian business is most likely to speak Chinese. Therefore, if your goal here in Australia is to improve your English, better best choose a white person owned business. (295字)

(六)其他

If your going to study in Melbourne, you should definitely not miss out on the Great Ocean Road. It is said to have one of the best views in the world. It is best to rent a car to drive along the coast with your friends. I would recommend a 3 day trip as the minimum. (55字)
