(一)基本資料

I chose to study at the International College of Hotel Management in Adelaide. During my first semester, I took four courses: The Server Etiquette, Restaurant Service Standards Etiquette and Training, Be Our Guest, and First Taste at Culinary. The first two courses focused on guest service and table setup. I also had the opportunity to intern at a real restaurant, applying the knowledge I gained in a practical setting. The third course covered the process of cleaning various types of rooms and included discussions on safety and security issues. The final course was a hands-on class where we prepared dishes and learned about food safety and related topics.(108字)

When discussing my favorite course, I would highly recommend the culinary class. Our lecturer, Lachlan Kelly, was an open-minded and kind individual. At the start of the course, he introduced us to the fundamental principles, and we had group discussions to deepen our understanding of the topics. I thoroughly enjoyed reading the online resources during class, as they helped me gain a deeper understanding and come up with solutions to problems occurring in the back of the house. However, the most exciting part was the practical sessions, where we were divided into three small groups. In the kitchen, I followed the lecturer's instructions carefully, ensuring I avoided burns or cuts. One memorable moment was when we were pan-frying steak. In my group, we followed the process correctly without creating any large flames, but another group accidentally caused a big flame. The lecturer quickly turned off their stove and helped them complete the cooking. During those few days, we demonstrated great teamwork, communication, and attention to safety. Good teamwork involved taking turns using the frying pans, pots, knives, and other tools. Communication was crucial in the kitchen—simple notifications, like saying "behind" when passing someone with a hot pot or knife, ensured no one got hurt during the practical sessions. Besides preparing delicious food, we also learned about hygiene, safety, tool classification, and the proper way to clean everything afterward.(229字)

The campus location was moved two years ago to a spot closer to the city center. The new classrooms and equipment provide students with a better learning environment. The accommodation, located in the city, is about a ten-minute walk from campus, with a shopping mall and supermarket just five minutes away—making it easy for students to buy groceries and essentials. Both the train and tram stations are conveniently located right in front of the accommodation, making travel simple as well. I live in Scape, one of the largest student accommodations in Australia. I stay in a shared apartment, and the building offers essential amenities such as washing machines, a study room, a gym, and entertainment spaces, so students don’t have to worry about those needs. The weather in Adelaide is pleasant and drier compared to Taiwan. Although I arrived in winter, the temperature didn’t feel as cold as in Tamsui, though the UV index here is higher, so wearing sunscreen—even in winter—is important. While Adelaide isn’t as busy as cities like Sydney or Melbourne, the lifestyle is more relaxed and slower, which is one of the reasons I prefer this city.(197字)

The biggest challenge for me has been adjusting to the cultural differences. For example, Australia uses left-hand traffic, which is the opposite of Taiwan, and it confused me for the first month. Another challenge is the cold water served at restaurants—whether it's tap or sparkling, the water is always ice-cold, something I still haven't gotten used to. The hardest adjustment, though, has been the food. While I enjoy steak and chips, I really miss Taiwanese food, which is hard to find in Adelaide, making my first month especially difficult. As for classes, I'm grateful for the English language courses we had before, as they helped me adapt to learning in English without worrying about language barriers. However, speaking English has been more challenging than listening or reading since I was mostly listening in class and not speaking as much. Once I realized this, I made a greater effort to practice. The most helpful strategy was speaking out more often. I was fortunate to make a new friend at college, and we practice English together, which has significantly improved my speaking ability. The practical courses also required me to communicate with others, which helped me become more comfortable with the language.(201字)

(五)大三出國建議

Here’s some advice for future students. First, prepare everything well in advance before studying abroad—this includes taking the English test and gathering all the necessary information to apply for colleges or universities. Second, thoroughly research the school, the living arrangements, and the country you’ll be staying in since you’ll be there for at least six months. While abroad, aside from studying or doing an internship, make sure to set aside time to explore the city and even other nearby countries, as it’s a rare opportunity to travel while still a student. I highly recommend studying in Australia. One of the main reasons is that there are many international students, which means plenty of student events and a diverse cultural environment. Australians are also very friendly, and the growing international community has made the country even more diverse, giving you a chance to learn about various cultures. In terms of schools, the International College of Hotel Management is an excellent choice for hospitality management students. In the first six months, we have three core subjects that prepare us for internships. These courses combine both theory and practical classes, allowing us to assess our understanding. Afterward, students have the opportunity to intern at a prestigious hotel, offering valuable hands-on experience and learning.(215字)

(六)其他

During the short break in the first semester, my classmates and I organized a seven-day road trip to Uluru, one of Australia’s most iconic attractions. This trip will likely be my most unforgettable memory from my time here. We even reserved a study room at the college to plan everything, and it took us just three days to finalize all the details. Planning it felt a bit like working on a group project, similar to the ones I did at Tamkang University, but it was an exciting experience and, so far, the best travel adventure I've had in my life.(101字)
